Ingredients

Chipotle Chicken Tacos

  • 2 tablespoons extra virgin olive oil
  • 1 pound ground chicken
  • 1 yellow onion, chopped
  • 2-3 teaspoons chipotle chili powder, to taste
  • 2 teaspoons smoked paprika
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1/4-1/2 teaspoon crushed red pepper, to taste
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1/4 cup fresh cilantro, chopped
  • 12 hard shell tacos
  • 2 cups shredded Mexican cheese

Cilantro Lime Ranch

  • 1 cup sour cream or plain Greek yogurt
  • 3/4 cup fresh cilantro, finely chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup pickled jalapeños, chopped
  • 2 tablespoons pickled jalapeño brine
  • Juice from 2 limes
  • 1 teaspoon kosher salt

Instructions

  1. Preheat the oven: Heat the oven to 400°F (200°C). Lightly grease a 9×13-inch baking dish or sheet pan and arrange the hard taco shells upright.
  2. Cook the filling: Heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and cook for 3-4 minutes until softened. Add the ground chicken and cook, breaking it apart with a spoon, until browned and cooked through, about 6-8 minutes.
  3. Season the chicken: Stir in the chipotle chili powder, smoked paprika, cumin, garlic powder, crushed red pepper, oregano, and kosher salt. Cook for 1-2 minutes so the spices become fragrant. Remove from the heat and stir in the chopped cilantro.
  4. Fill the tacos: Divide the seasoned chicken mixture evenly among the 12 taco shells. Top each taco generously with shredded Mexican cheese.
  5. Bake: Bake for 8-10 minutes, or until the cheese is fully melted and the taco shells are crisp. Keep an eye on the shells near the end so they do not become overly browned.
  6. Make the cilantro lime ranch: While the tacos bake, combine the sour cream or Greek yogurt, cilantro, garlic powder, onion powder, chopped pickled jalapeños, jalapeño brine, lime juice, and salt in a bowl. Stir until smooth and well combined.
  7. Serve: Remove the tacos from the oven and let them cool for 1-2 minutes. Drizzle or spoon the cilantro lime ranch over the tacos and garnish with additional cilantro or sliced jalapeños if desired. Serve immediately.

Notes

  • Protein options: Ground chicken works especially well, but ground beef or turkey can also be used.
  • Adjust the heat: Use less chipotle chili powder and crushed red pepper for milder tacos, or increase them for extra smoky heat.
  • Cheese: Mexican cheese blend, Monterey Jack, cheddar, or a combination of cheeses all work well.
  • Homemade taco shells: You can use corn tortillas brushed lightly with oil and baked over an oven rack until crisp and taco-shaped.
  • Ranch consistency: Add a small splash of water or extra lime juice if you prefer a thinner drizzle.
  • Make ahead: Prepare the chicken filling and cilantro lime ranch ahead of time, then assemble and bake the tacos just before serving.
  • Storage: Store leftover filling and ranch separately in airtight containers in the refrigerator. Reheat the filling and assemble fresh tacos for the best texture.
