Ingredients

Caramel Sauce

  • 2 cups (414g) granulated sugar
  • 1 cup (240ml) water
  • 1/2 cup (112g) unsalted butter
  • 1 cup (240ml) heavy whipping cream
  • 1 tbsp vanilla extract
  • 1 tsp salt

Chocolate Cake

  • 2 cups (260g) all-purpose flour
  • 2 cups (414g) granulated sugar
  • 3/4 cup (85g) natural unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) milk
  • 1 cup (240ml) vegetable oil
  • 1 1/2 tsp vanilla extract
  • 1 cup (240ml) hot water

Caramel Buttercream

  • 2 1/2 cups (560g) unsalted butter, room temperature
  • 10 cups (1150g) powdered sugar
  • 1/2 cup to 3/4 cup caramel sauce, prepared above
  • Salt, to taste
  • 1/2 cup chopped pecans, toasted

Chocolate Ganache

  • 6 oz (1 cup | 169g) semi-sweet chocolate chips
  • 1/2 cup (120ml) heavy whipping cream

Instructions

  1. Prepare the caramel sauce first. Add the granulated sugar and water to a heavy-bottomed saucepan over medium heat. Stir gently until the sugar dissolves, then allow the mixture to cook without stirring until it develops a deep amber color.
  2. Remove the saucepan from the heat and carefully whisk in the butter. Slowly add the heavy whipping cream while whisking continuously, as the mixture will bubble vigorously.
  3. Stir in the vanilla extract and salt. Allow the caramel sauce to cool completely before using it in the buttercream and cake assembly.
  4. Preheat the oven to 350°F (175°C). Grease and line three 8-inch round cake pans with parchment paper.
  5. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
  6. Add the eggs, milk, vegetable oil, and vanilla extract. Mix until the batter is smooth and well combined.
  7. Carefully stir in the hot water until the batter is smooth. The batter will be thin.
  8. Divide the batter evenly between the prepared cake pans.
  9. Bake for about 25–30 minutes, or until a toothpick inserted into the center comes out with only a few moist crumbs.
  10. Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
  11. Make the caramel buttercream. Beat the room-temperature butter until light and creamy. Gradually add the powdered sugar and continue beating until smooth.
  12. Add 1/2 to 3/4 cup of the cooled caramel sauce and a pinch of salt. Beat until fluffy and well combined.
  13. Toast the chopped pecans in a dry skillet over medium-low heat for a few minutes, stirring frequently. Let them cool completely.
  14. Prepare the chocolate ganache. Place the semi-sweet chocolate chips in a heatproof bowl. Heat the heavy cream until steaming but not boiling, then pour it over the chocolate. Let sit for 2–3 minutes and stir until smooth and glossy. Allow it to cool slightly until it reaches a spreadable consistency.
  15. Place one cooled cake layer on a serving plate. Spread a layer of caramel buttercream over the top, followed by some toasted pecans and a drizzle of caramel sauce.
  16. Add the second cake layer and repeat the buttercream, pecans, and caramel. Top with the final cake layer.
  17. Frost the outside and top of the cake with the remaining caramel buttercream.
  18. Pour or spread the chocolate ganache over the top, allowing some to gently drip down the sides.
  19. Finish with additional toasted pecans and caramel sauce if desired. Chill the cake briefly before slicing for cleaner layers.

Notes

  • Make sure the caramel sauce is completely cool before adding it to the buttercream.
  • The chocolate cake layers can be baked a day ahead and wrapped tightly once completely cooled.
  • Use room-temperature butter for the smoothest caramel buttercream.
  • Warm the caramel sauce slightly if it becomes too thick for drizzling, but let it cool before adding it to the cake.
  • Store the finished cake covered in the refrigerator and let it sit at room temperature before serving.
