Turkey Sandwich Kebabs

These Turkey Sandwich Kebabs are a fun, colorful, and easy no-cook lunch made with sliced turkey, crisp romaine lettuce, olives, juicy cherry tomatoes, cheese, dill pickles, and crunchy cucumber. Everything is threaded onto skewers for a portable meal or snack that is simple to customize and great for lunchboxes, picnics, and parties.

Ingredients

  • Turkey lunch meat, such as all-natural turkey lunchmeat
  • Romaine lettuce, cut into bite-size pieces
  • Olives
  • Cherry tomatoes
  • Cheese cubes, such as Colby cheese and mozzarella balls
  • Dill pickle spears, cut into smaller pieces if needed
  • Cucumber chunks, seeds removed
  • Skewers
  • Ranch dressing, optional, for serving

Instructions

  1. Prepare the ingredients: Wash and dry the vegetables. Cut the romaine lettuce, cucumber, and dill pickles into bite-size pieces. If using sliced turkey, fold or roll the slices and cut them into smaller portions that are easy to thread onto skewers.
  2. Assemble the kebabs: Thread the turkey, romaine lettuce, olives, cherry tomatoes, cheese, dill pickle pieces, and cucumber onto the skewers, alternating the ingredients for a colorful presentation.
  3. Repeat until all of the ingredients have been used.
  4. Serve: Arrange the turkey sandwich kebabs on a platter and serve with ranch dressing for dipping, if desired.

Notes

  • Use any deli turkey you enjoy, preferably a lower-sodium option if desired.
  • Fold the turkey into small pieces rather than threading an entire slice onto the skewer.
  • Cut all ingredients into similar bite-size pieces for easier eating.
  • Colby, cheddar, Swiss, or mozzarella all work well in these kebabs.
  • Remove cucumber seeds if the cucumber is very watery to help keep the kebabs crisp.
  • Add bell peppers, avocado, grapes, or carrots for more variety.
  • Use short cocktail skewers for lunchboxes or party appetizers.
  • For food safety, keep the assembled kebabs chilled until ready to serve.
  • Serve with ranch, honey mustard, hummus, or another favorite dipping sauce.
