Teriyaki Shrimp Rice Bowls

These Teriyaki Shrimp Rice Bowls are a quick and flavorful meal made with juicy shrimp, sweet teriyaki sauce, fragrant jasmine rice, creamy avocado, fresh cilantro, and a squeeze of lime. Add your favorite sauce for an easy weeknight bowl with plenty of flavor.

Ingredients

  • ½ pound jumbo shrimp, peeled and deveined
  • ¼ cup teriyaki sauce
  • 3 cloves garlic, minced
  • Kosher salt, to taste
  • Black pepper, to taste
  • Blackstone Sweet Teriyaki seasoning blend, optional
  • Cooking oil of choice
  • 2 (8-ounce) microwave pouches jasmine rice
  • 1 large avocado, sliced
  • ¼ cup chopped fresh cilantro
  • 2 lime wedges
  • Sauce of choice, such as yum yum sauce, Sriracha, spicy mayo, or extra teriyaki sauce

Instructions

  1. Place the shrimp in a bowl and toss with the teriyaki sauce and minced garlic. Season lightly with kosher salt, black pepper, and optional Sweet Teriyaki seasoning blend.
  2. Let the shrimp marinate for about 10–15 minutes while preparing the other ingredients.
  3. Prepare the jasmine rice according to the package directions. Divide the hot rice between two serving bowls.
  4. Heat a small amount of cooking oil in a skillet over medium-high heat. Add the marinated shrimp in a single layer.
  5. Cook the shrimp for about 2–3 minutes per side, or until pink, opaque, and cooked through. Avoid overcooking.
  6. Divide the cooked shrimp between the rice bowls.
  7. Add sliced avocado and chopped cilantro to each bowl.
  8. Squeeze fresh lime juice over the bowls.
  9. Drizzle with your favorite sauce, such as yum yum sauce, Sriracha, spicy mayo, or additional teriyaki sauce.
  10. Serve immediately while the shrimp and rice are warm.

Notes

  • Use fresh or thawed jumbo shrimp for the best texture.
  • Do not overcook the shrimp; they are ready when they turn pink and opaque.
  • Microwave jasmine rice makes this recipe especially quick, but freshly cooked rice works just as well.
  • Choose low-sodium teriyaki sauce if you want to reduce the salt level.
  • Add cucumber, shredded carrots, edamame, or green onions for extra vegetables.
  • For a spicier bowl, use Sriracha or spicy mayo.
  • Serve immediately for the best combination of warm rice, tender shrimp, and creamy avocado.
