Taco Macaroni and Cheese Recipe

Taco Macaroni and Cheese is a comforting one-pot dinner that combines seasoned ground beef, tender pasta shells, creamy cheese, salsa, and classic taco flavors. It’s an easy family-friendly meal that’s rich, cheesy, and ready for a busy weeknight.

Ingredients

  • 1 tablespoon olive oil
  • 1 small white onion, diced
  • 1 pound ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 1/2 cups beef broth
  • 1 cup salsa
  • 1 package taco seasoning
  • 1 teaspoon garlic powder
  • 3 cups uncooked pasta shells
  • 4 oz cream cheese, room temperature
  • 3 cups shredded cheddar cheese

Instructions

  1. Heat the olive oil in a large deep skillet or Dutch oven over medium heat.
  2. Add the diced onion and cook for 2–3 minutes, until it begins to soften.
  3. Add the ground beef and cook for 6–8 minutes, breaking it apart with a spoon, until browned and cooked through. Drain excess grease if necessary.
  4. Season the beef with salt, black pepper, taco seasoning, and garlic powder. Stir well to combine.
  5. Pour in the beef broth and salsa, then stir to combine.
  6. Add the uncooked pasta shells and bring the mixture to a gentle boil.
  7. Reduce the heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
  8. Remove the skillet from the heat and stir in the softened cream cheese until completely melted and creamy.
  9. Add the shredded cheddar cheese a handful at a time, stirring until melted and smooth.
  10. Let the macaroni and cheese rest for 2–3 minutes to thicken, then serve warm.

Notes

  • Use a large deep skillet so the pasta has enough room to cook evenly.
  • Stir the pasta occasionally while simmering to prevent it from sticking to the bottom of the pan.
  • If the mixture becomes too thick, stir in a small splash of beef broth or milk.
  • For extra taco flavor, add a pinch of chili powder, cumin, or crushed red pepper flakes.
  • You can substitute ground turkey or ground chicken for the beef if desired.
  • For a cheesier finish, sprinkle extra cheddar cheese over each serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of milk or broth.
