Sweet Potato Turkey Skillet

This Ground Turkey Sweet Potato Skillet is a simple, wholesome dinner packed with lean turkey, tender sweet potatoes, colorful bell peppers, spinach, and melted mozzarella cheese. Warm spices add plenty of flavor while a splash of chicken broth helps everything cook together in one skillet.

Ingredients

  • 1 lb 93% lean ground turkey
  • 1 tablespoon olive oil
  • 2 large sweet potatoes, peeled and cut into uniform ½-inch cubes
  • 2 medium bell peppers, diced
  • 1 medium onion, diced
  • 2 cups fresh baby spinach, packed
  • 1½ cups shredded mozzarella cheese
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ cup chicken broth
  • Salt and black pepper, to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and bell peppers and cook for 3 to 4 minutes, until they begin to soften.
  2. Add the ground turkey and cook for 6 to 8 minutes, breaking it apart with a wooden spoon, until browned and cooked through.
  3. Season the turkey and vegetables with chili powder, cumin, garlic powder, paprika, salt, and black pepper. Stir well to evenly coat everything with the spices.
  4. Add the cubed sweet potatoes and chicken broth. Stir to combine, then cover the skillet and cook for 10 to 15 minutes, stirring occasionally, until the sweet potatoes are tender when pierced with a fork.
  5. Remove the lid and cook for another 2 to 3 minutes if needed to allow excess liquid to evaporate.
  6. Add the fresh spinach and stir until wilted, about 1 to 2 minutes.
  7. Sprinkle the shredded mozzarella evenly over the top. Cover the skillet for 2 to 3 minutes, until the cheese is melted.
  8. Remove from the heat and let the skillet rest for a couple of minutes before serving.

Notes

  • Cut the sweet potatoes into evenly sized ½-inch cubes so they cook at the same rate.
  • If the skillet becomes dry before the sweet potatoes are tender, add another splash of chicken broth.
  • For extra flavor, add a pinch of red pepper flakes or a little smoked paprika.
  • Freshly shredded mozzarella melts especially well, but pre-shredded cheese can also be used.
  • Ground chicken can be substituted for ground turkey if preferred.
  • For a dairy-free version, omit the mozzarella or use your favorite dairy-free shredded cheese.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days and reheat thoroughly.
