Stir-Fried Chinese Garlic Chicken

This Stir-Fried Chinese Garlic Chicken is a quick and flavorful dinner made with tender chicken, fresh garlic, ginger, crisp snow peas, red bell pepper, and onion. The savory sauce combines soy sauce, rice vinegar, dark soy sauce, and a touch of brown sugar for a delicious takeout-style meal at home.

Ingredients

  • 1 lb chicken breast tenders, cut into ½-inch-thin strips
  • 1 tsp toasted sesame oil
  • ¼ tsp ground white pepper
  • For the Stir-Fry:
  • 2 tbsp peanut oil or vegetable oil, divided
  • 5–6 garlic cloves, minced
  • 1 tbsp freshly grated ginger
  • 1 tsp red chili flakes
  • ½ cup roughly chopped red onion
  • 1 handful snow peas, trimmed
  • ½ red bell pepper, thinly sliced
  • For the Sauce:
  • 1 tbsp rice vinegar
  • 2 tbsp low-sodium soy sauce
  • 2 tsp dark soy sauce
  • 2 tsp Chinese rice wine or dry sherry, optional
  • ½ tbsp brown sugar
  • 2 tsp cornstarch

Instructions

  1. In a small bowl, combine the rice vinegar, low-sodium soy sauce, dark soy sauce, Chinese rice wine or dry sherry if using, brown sugar, and cornstarch. Whisk until the cornstarch is fully dissolved. Set aside.
  2. Place the sliced chicken in a bowl and toss with the toasted sesame oil and white pepper until evenly coated.
  3. Heat a large wok or skillet over high heat. Add 1 tablespoon of the peanut or vegetable oil.
  4. Add the chicken in a single layer and stir-fry for 3–4 minutes, turning frequently, until lightly browned and cooked through. Transfer the chicken to a plate.
  5. Add the remaining tablespoon of oil to the wok. Add the minced garlic, grated ginger, and red chili flakes. Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.
  6. Add the red onion, snow peas, and red bell pepper. Stir-fry for 2–3 minutes until the vegetables are crisp-tender.
  7. Return the cooked chicken to the wok and toss with the vegetables.
  8. Whisk the prepared sauce once more, then pour it into the wok. Stir-fry for 1–2 minutes until the sauce thickens and coats the chicken and vegetables.
  9. Remove from the heat and serve immediately with steamed rice or noodles.

Notes

  • For the best texture, slice the chicken thinly and evenly so it cooks quickly.
  • Use high heat to give the chicken and vegetables a delicious stir-fried flavor.
  • Do not overcook the snow peas or bell pepper; they should remain crisp-tender.
  • Chinese rice wine can be replaced with dry sherry or omitted if needed.
  • Adjust the red chili flakes to your preferred level of spiciness.
  • Serve with steamed white rice, brown rice, or noodles for a complete meal.
