Ready in about 25 minutes, this easy noodle recipe is perfect for busy weeknights and can be customized with your favorite vegetables and toppings.

Ingredients

  • 16 ounces brown rice noodles
  • 3 large cloves garlic, minced, or 4–5 small cloves
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon oil
  • ⅔ cup creamy peanut butter, preferably low or no salt
  • 4 tablespoons low-sodium tamari or soy sauce
  • ⅓–1 cup hot water, as needed
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1–2 tablespoons sriracha
  • 1–2 tablespoons maple syrup or honey
  • ½ teaspoon red pepper flakes, optional
  • Optional: 2 teaspoons sesame seeds for garnish
  • Optional: sliced green onions, chopped cilantro, or crushed peanuts for topping

Instructions

  1. Cook the brown rice noodles according to the package directions. Drain and set aside.
  2. Heat the oil in a large skillet or pan over medium heat. Add the minced garlic and grated ginger and cook for about 30–60 seconds until fragrant.
  3. In a bowl, whisk together the peanut butter, low-sodium tamari or soy sauce, rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, and red pepper flakes.
  4. Gradually whisk in hot water until the peanut sauce becomes smooth, creamy, and pourable. Start with ⅓ cup and add more as needed.
  5. Add the cooked noodles to the skillet with the garlic and ginger. Pour the peanut sauce over the noodles.
  6. Toss everything together over low heat until the noodles are evenly coated and heated through, about 2–3 minutes.
  7. Serve immediately and garnish with sesame seeds, green onions, cilantro, or crushed peanuts if desired.

Notes

  • Use hot water when mixing the peanut sauce because it combines more easily with peanut butter.
  • Adjust the amount of sriracha and red pepper flakes to control the spice level.
  • For a thinner sauce, add more hot water one tablespoon at a time.
  • Add cooked chicken, shrimp, tofu, or your favorite vegetables for extra protein and flavor.
  • For a vegan version, use maple syrup instead of honey.
  • Leftovers can be refrigerated and reheated with a splash of water to loosen the sauce.
