Slow Cooker Sloppy Joes – Easy Crockpot Beef Sandwiches

These Slow Cooker Sloppy Joes feature tender ground beef simmered in a sweet, tangy tomato sauce seasoned with Worcestershire sauce, mustard, garlic, and smoked paprika. The slow cooker helps the flavors blend into a rich, comforting filling that’s perfect for piling onto soft hamburger buns with slices of yellow cheese. This easy family dinner is ideal for busy weeknights, game days, or casual gatherings.

Ingredients

For the Sloppy Joe Filling

  • 2 teaspoons vegetable oil
  • 1 1/2 pounds ground beef
  • 16 ounces tomato sauce
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon prepared mustard
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper, to taste

For Serving

  • 6 hamburger buns
  • 6 slices yellow cheese

Instructions

  1. Brown the beef: Heat the vegetable oil in a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it into small crumbles, until browned and cooked through to 160°F (71°C). Drain excess grease.
  2. Mix the sauce: In a bowl, whisk together the tomato sauce, ketchup, brown sugar, Worcestershire sauce, garlic powder, onion powder, prepared mustard, smoked paprika, salt, and black pepper.
  3. Combine in the slow cooker: Transfer the browned beef to the slow cooker. Pour the sauce over the beef and stir until evenly combined.
  4. Slow cook: Cover and cook on LOW for 3–4 hours or HIGH for 1 1/2–2 hours, stirring once if convenient, until the sauce is thick and flavorful.
  5. Adjust the filling: If the mixture is thinner than you prefer, cook uncovered for the last 15–20 minutes if your slow cooker allows safe uncovered cooking, or transfer the filling to a skillet and simmer briefly until thickened. Taste and adjust the seasoning.
  6. Prepare the buns: Lightly toast the hamburger buns if desired. Place a slice of yellow cheese on each bottom bun.
  7. Assemble and serve: Spoon the hot Sloppy Joe filling onto the buns, top with the remaining bun halves, and serve immediately.

Notes

  • Brown the beef first: This adds flavor and helps remove excess fat before the meat goes into the slow cooker.
  • Choose your texture: For thicker Sloppy Joes, let the filling simmer uncovered briefly near the end or reduce it in a skillet.
  • Adjust sweetness: For a less sweet sauce, reduce the brown sugar to 1 tablespoon. Add a little extra mustard or Worcestershire sauce for more tang.
  • Cheese options: Yellow American cheese melts well, but cheddar or Monterey Jack can also be used.
  • Make ahead: Prepare the filling a day in advance and refrigerate it. Reheat thoroughly before serving on fresh buns.
  • Storage: Store the filling separately from the buns in an airtight container in the refrigerator for up to 3–4 days. Freeze the filling for up to 3 months.
