Sheet Pan Tacos

These Sheet Pan Tacos are an easy way to make crispy, cheesy beef tacos all at once. Seasoned ground beef, onions, salsa, and cheddar cheese are tucked into tortillas and baked on a sheet pan until golden and crisp. They are quick, family-friendly, and perfect for an easy weeknight dinner.

Ingredients

  • 6 6-inch tortillas
  • 1 pound ground beef
  • ½ cup chopped onion
  • 1–2 tablespoons taco seasoning, or more to taste
  • ¼ cup salsa
  • Salt and pepper, to taste
  • ½ cup shredded cheddar cheese, plus more for topping

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
  2. Heat a skillet over medium-high heat. Add the ground beef and chopped onion. Cook for 6–8 minutes, breaking the beef apart, until browned and the onion is softened. Drain excess grease if needed.
  3. Stir in the taco seasoning and salsa. Season with salt and pepper to taste, then cook for 1–2 minutes until well combined.
  4. Warm the tortillas briefly so they are flexible. Arrange them on the prepared sheet pan, slightly overlapping if needed.
  5. Spoon the seasoned beef mixture evenly over one half of each tortilla. Sprinkle with cheddar cheese.
  6. Fold each tortilla over the filling to form a taco, then gently press down to help keep it closed. Sprinkle a little extra cheese over the tops if desired.
  7. Bake for 8–12 minutes, or until the tortillas are crisp and golden and the cheese is melted.
  8. Remove from the oven and let the tacos cool for 2–3 minutes before serving.

Notes

  • Use corn tortillas or small flour tortillas depending on your preference. Flour tortillas tend to become especially crisp in the oven.
  • Do not overfill the tortillas, as too much filling can make them difficult to fold.
  • Add diced bell peppers, jalapeños, black beans, or corn to the beef mixture for extra flavor and texture.
  • Serve with sour cream, guacamole, chopped tomatoes, cilantro, or extra salsa.
  • For extra crispy tacos, lightly brush the tortillas with oil before baking.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or air fryer.
