Sheet Pan Breakfast Hash

This easy Sheet Pan Breakfast Hash is a hearty, colorful breakfast made with crispy baby potatoes, sweet cherry tomatoes, caramelized onion, and baked eggs. Everything cooks together on one pan for a simple, flavorful breakfast with minimal cleanup.

Ingredients

  • 1–2 tablespoons butter, melted
  • 1 cup cherry tomatoes
  • 3/4–1 lb baby potatoes, quartered
  • 1 yellow onion, thinly sliced
  • 1/2–1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 4–6 eggs
  • Goat cheese, optional
  • Fresh parsley, optional
  • Avocado, optional
  • Hot sauce, optional

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper if desired.
  2. Add the quartered baby potatoes and sliced onion to the sheet pan. Drizzle with melted butter and season with sea salt and black pepper. Toss well to coat.
  3. Spread the potatoes and onions into an even layer and roast for 20–25 minutes, stirring once halfway through.
  4. Add the cherry tomatoes to the pan and toss gently with the roasted vegetables.
  5. Make 4–6 small wells among the vegetables and crack an egg into each well.
  6. Return the sheet pan to the oven and bake for 7–10 minutes, or until the egg whites are set and the yolks reach your preferred doneness.
  7. Remove from the oven and top with goat cheese, fresh parsley, avocado, and hot sauce if desired.
  8. Serve warm directly from the sheet pan.

Notes

  • For crispy potatoes, spread them in a single layer without overcrowding the pan.
  • Adjust the egg cooking time depending on whether you prefer runny or firm yolks.
  • For extra flavor, add smoked paprika, garlic powder, or your favorite breakfast seasoning.
  • Optional toppings such as goat cheese, avocado, parsley, and hot sauce can be added just before serving.
