Pizza Quesadillas

These Pizza Quesadillas combine the cheesy goodness of pizza with the crispy texture of a quesadilla. Flour tortillas are filled with pizza sauce, melted mozzarella, Italian seasoning, and your choice of pepperoni or cooked sausage, then cooked in butter until golden and crisp. They make an easy, quick, and family-friendly lunch or dinner.

Ingredients

  • 8 flour tortillas
  • 1 cup pizza sauce
  • 2 cups shredded mozzarella cheese
  • 1 cup pepperoni or cooked sausage
  • Italian seasoning, to taste
  • Butter, for cooking

Instructions

  1. Spread a thin layer of pizza sauce over half of each flour tortilla, leaving a small border around the edges.
  2. Sprinkle mozzarella cheese over the sauce, then add pepperoni or cooked sausage and a light sprinkle of Italian seasoning.
  3. Fold each tortilla in half to cover the filling.
  4. Heat a skillet over medium heat and lightly butter the surface.
  5. Place the quesadillas in the skillet and cook for 2–3 minutes per side, until golden brown and the cheese is melted.
  6. Repeat with the remaining quesadillas, adding a little more butter to the pan as needed.
  7. Let the quesadillas cool for 1–2 minutes, then slice into wedges and serve with extra pizza sauce for dipping.

Notes

  • For a pork-free option, use cooked chicken, beef sausage, or turkey pepperoni instead of regular pepperoni or pork sausage.
  • Do not overfill the tortillas, as this can make them difficult to fold and flip.
  • Cook over medium heat so the tortillas become crisp without burning before the cheese melts.
  • Add your favorite pizza toppings such as sliced mushrooms, bell peppers, olives, or cooked onions.
  • For extra crisp quesadillas, lightly brush both sides of the tortillas with melted butter before cooking.
  • Store leftovers in the refrigerator for up to 3 days and reheat in a skillet or air fryer for the best texture.
