Philly Cheesesteak

This Philly Cheesesteak is made with thinly sliced ribeye steak, tender sautéed onions, optional mushrooms and peppers, and creamy cheese sauce piled into crusty Italian rolls. It’s a hearty, satisfying sandwich that’s easy to make at home.

Ingredients

  • 1 large onion, sliced
  • 1/2 pound sliced fresh mushrooms, optional
  • 1 small green pepper, sliced, optional
  • 1 small sweet red pepper, sliced, optional
  • 6 tablespoons canola oil, divided
  • 1 1/2 pounds beef ribeye steaks, thinly sliced
  • 4 crusty Italian rolls, split
  • Process cheese sauce
  • Ketchup, optional

Instructions

  1. Heat 2 tablespoons of the canola oil in a large skillet or griddle over medium-high heat. Add the sliced onion and optional mushrooms and peppers.
  2. Cook the vegetables for 5 to 7 minutes, stirring occasionally, until tender and lightly browned. Transfer them to a plate and set aside.
  3. Add the remaining 4 tablespoons of canola oil to the skillet. Add the thinly sliced ribeye steak in batches if necessary to avoid overcrowding.
  4. Cook the steak for 2 to 4 minutes, stirring and chopping it with a spatula as it cooks, until browned and cooked to your preferred doneness.
  5. Return the cooked vegetables to the skillet and toss them with the steak. Divide the mixture into 4 portions.
  6. Spoon process cheese sauce over each portion and allow it to melt into the steak and vegetables.
  7. Lightly toast the Italian rolls, if desired. Fill each roll with the steak, vegetables, and melted cheese.
  8. Serve immediately with ketchup on the side or drizzled over the sandwich, if desired.

Notes

  • For the most tender cheesesteak, slice the ribeye very thinly against the grain.
  • Partially freezing the steak for 20 to 30 minutes makes it easier to slice thinly.
  • Mushrooms and peppers are optional and can be left out for a more traditional onion-and-cheese version.
  • Provolone or white American cheese can be used instead of process cheese sauce if preferred.
  • For the best texture, serve the sandwiches immediately while the steak and cheese are hot.
