Minute Miso Butter Ramen

This Minute Miso Butter Ramen is a quick and comforting bowl of noodles made with creamy butter, savory white miso, garlic, soy sauce, and tender baby bok choy. A touch of chili crisp adds gentle heat, while an optional soft-boiled egg and scallions make it a satisfying meal ready in minutes.

Ingredients

  • 2 tablespoons (28 g) unsalted butter
  • 1 tablespoon (20 g) white miso paste
  • 1 clove garlic, grated or finely minced
  • 1½ cups (360 ml) water
  • 1 tablespoon (15 ml) reduced-sodium soy sauce
  • 1 (3-ounce; 85 g) package instant ramen noodles, seasoning packet discarded or saved for another use
  • 1 medium baby bok choy (about 2 ounces; 60 g), cut into 1-inch pieces
  • ½ teaspoon chili crisp, plus more for serving, optional
  • ½ teaspoon light brown sugar, optional
  • Soft-boiled egg, for serving, optional
  • Sliced scallions, for serving, optional

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the miso paste and grated garlic. Stir constantly for about 30–60 seconds, until fragrant and the miso is blended into the butter.
  3. Slowly add the water while stirring to create a smooth broth. Stir in the reduced-sodium soy sauce and brown sugar if using.
  4. Bring the broth to a gentle simmer. Add the ramen noodles and cook according to the package directions, usually about 2–3 minutes.
  5. Add the chopped baby bok choy during the final minute of cooking and simmer until the noodles are tender and the bok choy is bright green and slightly softened.
  6. Stir in the chili crisp if using. Taste and adjust the soy sauce or chili crisp as needed.
  7. Transfer the ramen and broth to a serving bowl. Top with a soft-boiled egg, sliced scallions, and additional chili crisp if desired.
  8. Serve immediately while hot.

Notes

  • Use white miso for a mild, slightly sweet savory flavor. Avoid boiling the miso for an extended time after adding it.
  • For a richer bowl, add another teaspoon of butter or a splash of sesame oil.
  • Add mushrooms, spinach, corn, shredded carrots, or leftover cooked chicken for a more substantial meal.
  • Adjust the chili crisp to your preferred spice level or leave it out for a mild ramen.
  • Reduced-sodium soy sauce helps control the saltiness because miso is naturally salty.
  • The ramen is best served immediately because the noodles continue absorbing the broth as they sit.
  • For a vegetarian version, use a vegetarian-friendly miso and soy sauce; check the ramen noodles and chili crisp ingredients as well.
