Ingredients

  • 1 lb ground beef, 85/15 preferred
  • 1/2 cup plain breadcrumbs
  • 1/3 cup milk
  • 1 egg
  • 1/4 cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups mashed potatoes, prepared or leftover
  • 1/4 cup sour cream
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • 1 1/2 cups shredded cheddar cheese
  • Fresh parsley, optional, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9-inch square or similar baking dish.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper. Mix gently until just combined.
  3. Press the meatloaf mixture evenly into the bottom of the prepared baking dish.
  4. Bake the meatloaf layer for about 25–30 minutes, or until the beef is mostly cooked through.
  5. Meanwhile, combine the mashed potatoes, sour cream, and butter in a bowl. Season with salt and pepper to taste and mix until creamy.
  6. Carefully remove the partially baked meatloaf from the oven. If there is excess grease, carefully drain it.
  7. Spread the mashed potatoes evenly over the meatloaf layer.
  8. Sprinkle the shredded cheddar cheese evenly over the mashed potatoes.
  9. Return the dish to the oven and bake for another 15–20 minutes, until the meatloaf is fully cooked and the cheese is melted and lightly golden.
  10. For a more golden cheese topping, broil for 1–2 minutes at the end, watching closely.
  11. Let the casserole rest for 5–10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.

  • Use 85/15 ground beef for a juicy meatloaf with good flavor.
  • Leftover mashed potatoes work especially well and make this recipe quick to assemble.
