Loaded Potato Taco Bowl Recipe

This Loaded Potato Taco Bowl combines crispy roasted potatoes with seasoned ground beef, melted cheese, creamy sour cream, and fresh green onions. It is an easy, hearty dinner with all the comforting flavors of loaded potatoes and taco night in one satisfying bowl.

Ingredients

  • 2 lbs russet potatoes, cut into ½-inch cubes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 pound ground beef, or ground turkey/plant-based crumbles
  • 1 packet (1 oz) taco seasoning mix
  • ½ cup water
  • 1 cup shredded cheddar or Mexican-blend cheese
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup chopped fresh chives or green onions
  • Optional: 4 steak portions, cooked and crumbled

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. Add the cubed potatoes to the baking sheet. Drizzle with olive oil and season with salt and black pepper. Toss well to coat.
  3. Spread the potatoes into a single layer and roast for 25–35 minutes, flipping or stirring halfway through, until golden brown and crisp on the outside and tender inside.
  4. While the potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and cook for 6–8 minutes, breaking it apart as it browns. Drain excess grease if needed.
  5. Add the taco seasoning and ½ cup water. Stir well and simmer for 3–5 minutes, until the seasoning sauce thickens and coats the meat.
  6. When the potatoes are ready, divide them among serving bowls. Top each bowl with seasoned taco meat.
  7. Sprinkle shredded cheese over the hot potatoes and beef. Let it sit for a minute or two so the cheese begins to melt.
  8. Add a spoonful of sour cream or Greek yogurt and finish with chopped chives or green onions.
  9. If using cooked crumbled steak, add it as an additional topping before serving.

Notes

  • Cut the potatoes into similar-sized cubes so they roast evenly.
  • For extra crispy potatoes, avoid overcrowding the baking sheet and roast them in a single layer.
  • Ground turkey or plant-based crumbles can be used instead of ground beef.
  • For extra heat, add jalapeños, hot sauce, salsa, or crushed red pepper flakes.
  • Add toppings such as diced tomatoes, avocado, black beans, corn, cilantro, or guacamole.
  • Greek yogurt makes a lighter topping while still adding creaminess.
  • For meal prep, store the potatoes, taco meat, and toppings separately and assemble when ready to eat.
