Hawaiian Chicken Sheet Pan Recipe

Hawaiian Chicken Sheet Pan is an easy one-pan dinner featuring tender chicken, sweet pineapple, colorful bell peppers, and red onion tossed with soy sauce and garlic. Roasted until caramelized and flavorful, this simple meal is served over rice and finished with green onions and sesame seeds.

Ingredients

  • 2 lbs chicken breast, cut into bite-sized pieces
  • 1 bell pepper, sliced
  • 1 red onion, sliced
  • 2 cups pineapple chunks
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • Salt and pepper, to taste
  • Cooked rice, for serving
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large sheet pan with parchment paper or lightly grease it.
  2. Place the bite-sized chicken pieces, sliced bell pepper, red onion, and pineapple chunks on the sheet pan.
  3. In a small bowl, whisk together the soy sauce, olive oil, minced garlic, salt, and pepper.
  4. Pour the sauce over the chicken and vegetables, then toss everything until evenly coated.
  5. Spread the ingredients into an even layer, leaving space between the pieces for better browning.
  6. Roast for 20–25 minutes, stirring once halfway through, until the chicken is cooked through and the vegetables are tender.
  7. Check that the thickest pieces of chicken have reached an internal temperature of 165°F (74°C).
  8. Serve the Hawaiian chicken and roasted pineapple mixture over cooked rice.
  9. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • Cut the chicken into evenly sized pieces so everything cooks at the same rate.
  • Fresh or canned pineapple can be used. If using canned pineapple, drain it well before adding it to the pan.
  • For extra caramelization, avoid overcrowding the sheet pan.
  • Add red pepper flakes or a little honey for a sweeter or spicier variation.
  • Chicken should reach an internal temperature of 165°F (74°C) for food safety.
  • Serve with white rice, brown rice, or cauliflower rice.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
