French Dip Tortilla Roll Ups

These French Dip Tortilla Roll Ups are an easy twist on the classic French dip sandwich. Thinly sliced roast beef and melty mozzarella or provolone are rolled in flour tortillas, baked until golden, and served with a savory homemade au jus for dipping.

Ingredients

  • 1 lb thinly sliced roast beef, deli style or leftover
  • 1½ cups shredded mozzarella or provolone cheese
  • 4 large flour tortillas
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon onion powder, for the au jus
  • 1 teaspoon garlic powder, for the au jus
  • 2 tablespoons butter, melted
  • 1 teaspoon garlic powder, for seasoning
  • 1 teaspoon onion powder, for seasoning
  • 1 teaspoon dried parsley

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small saucepan, combine the beef broth, Worcestershire sauce, soy sauce, onion powder, and garlic powder. Bring to a gentle simmer and cook for 5–7 minutes. Keep warm.
  3. Lay the flour tortillas flat and divide the roast beef evenly among them. Sprinkle the shredded mozzarella or provolone over the roast beef.
  4. Roll each tortilla tightly, folding in the sides as you roll to keep the filling inside.
  5. Place the roll ups seam-side down on the prepared baking sheet.
  6. Mix the melted butter with the garlic powder, onion powder, and dried parsley. Brush the seasoned butter over the tops of the tortilla roll ups.
  7. Bake for 12–15 minutes, or until the tortillas are crisp and golden and the cheese is melted.
  8. Slice the roll ups in half if desired and serve immediately with the warm au jus for dipping.

Notes

  • Leftover roast beef works especially well in this recipe.
  • Provolone gives the roll ups a classic French dip flavor, while mozzarella provides a milder, extra-melty filling.
  • Whole wheat or gluten-free tortillas can be used if preferred.
  • Do not overfill the tortillas, as this can make them difficult to roll tightly.
  • Serve the au jus warm alongside the roll ups for dipping.
