Fluffy Japanese Pancakes

These Fluffy Japanese Pancakes are tall, soft, and wonderfully airy thanks to a delicate egg yolk batter and whipped meringue. They make a beautiful breakfast or brunch and are perfect served with fresh fruit, maple syrup, whipped cream, or powdered sugar.

Ingredients

  • 1 egg yolk
  • 2 tablespoons sugar
  • 2 tablespoons milk
  • 1/2 teaspoon pure vanilla extract
  • 3 tablespoons cake flour
  • 1/2 teaspoon baking powder
  • 2 large egg whites
  • 1 1/2 tablespoons sugar

Instructions

  1. Separate the egg yolk from the egg whites. Place the yolk in one bowl and the egg whites in a clean, dry bowl.
  2. Whisk the egg yolk with 2 tablespoons of sugar until smooth. Add the milk and vanilla extract and whisk until combined.
  3. Sift in the cake flour and baking powder. Gently whisk until a smooth, thick batter forms. Do not overmix.
  4. Using an electric mixer, beat the egg whites until foamy. Gradually add 1 1/2 tablespoons of sugar and continue beating until stiff, glossy peaks form.
  5. Gently fold one-third of the meringue into the yolk batter to lighten it. Fold in the remaining meringue in two additions, using gentle movements to preserve the air.
  6. Heat a nonstick skillet over low heat and lightly grease it. Spoon the batter into tall rounds, building the pancakes upward rather than spreading them out.
  7. Add a small splash of water to the empty part of the pan, cover with a lid, and cook over low heat for about 5–7 minutes.
  8. Carefully flip the pancakes and cover again. Cook for another 4–6 minutes, or until the pancakes are cooked through and lightly golden.
  9. Transfer to a plate and serve immediately with your favorite toppings.

Notes

  • Use room-temperature egg whites for the best meringue volume.
  • Make sure the mixing bowl and beaters are completely clean and free of grease.
  • Cook the pancakes over low heat so the centers have enough time to cook without burning the outside.
  • Handle the batter gently after adding the meringue to keep the pancakes light and fluffy.
  • Japanese soufflé pancakes naturally deflate slightly after cooking, so serve them immediately for the tallest appearance.
