Easy Ramen Recipe

This Easy Ramen Recipe is a comforting bowl of ramen made with savory chicken broth, garlic, ginger, mushrooms, bok choy, tender grilled chicken, and noodles. Topped with soft-boiled eggs, green onions, and sesame seeds, it’s a simple homemade ramen that’s packed with flavor.

Ingredients

  • 1 tablespoon sesame oil
  • 2 teaspoons minced garlic
  • 1 teaspoon ginger paste
  • 1 1/2 cups sliced mushrooms
  • 4 cups chicken stock
  • 4 cups water
  • 1/4 cup soy sauce
  • 5–6 baby bok choy leaves
  • 4 packages ramen noodles, fresh, frozen, or dried; discard included seasoning packets
  • 1 lb sliced grilled chicken
  • 2 soft-boiled eggs
  • 1/4 cup sliced green onions
  • Sesame seeds, for garnish

Instructions

  1. Heat the sesame oil in a large pot over medium heat.
  2. Add the minced garlic and ginger paste. Cook for about 30 seconds, stirring constantly, until fragrant.
  3. Add the sliced mushrooms and cook for 2–3 minutes until they begin to soften.
  4. Pour in the chicken stock, water, and soy sauce. Bring the broth to a gentle simmer and cook for 8–10 minutes so the flavors can develop.
  5. Add the baby bok choy and cook for 2–3 minutes until slightly tender but still vibrant.
  6. Add the ramen noodles and cook according to the package directions until tender. Avoid overcooking the noodles.
  7. Divide the ramen noodles and broth among four bowls.
  8. Top each bowl with sliced grilled chicken and half of a soft-boiled egg.
  9. Garnish with green onions and sesame seeds.
  10. Serve immediately while hot.

Notes

  • Use fresh, frozen, or dried ramen noodles, but discard the seasoning packets since the homemade broth provides the flavor.
  • For the best texture, cook the noodles just until tender because they continue absorbing broth as they sit.
  • You can use rotisserie chicken or leftover grilled chicken to make the recipe even faster.
  • Add sliced carrots, corn, spinach, or bean sprouts for extra vegetables.
  • For spicy ramen, add chili oil, sriracha, or red pepper flakes to taste.
  • Adjust the amount of soy sauce depending on the saltiness of your chicken stock.
  • Store leftover broth and noodles separately when possible to prevent the noodles from becoming too soft.
