These Easy French Dip Sliders are packed with tender deli roast beef, melted provolone cheese, and sweet caramelized onions on soft rolls. Brushed with seasoned butter and served with warm au jus for dipping, they’re an easy party appetizer, game-day snack, or family-friendly dinner.

Ingredients

  • 3 tablespoons unsalted butter
  • 1 medium onion, thinly sliced
  • 2 teaspoons fresh thyme, minced
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 12 sweet rolls
  • 10 slices provolone cheese
  • 14 ounces sliced deli roast beef
  • 1/2 cup unsalted butter, melted
  • 1 1/2 tablespoons dried onion soup mix
  • 1 packet au jus gravy mix
  • 3 cups water
  • Fresh chopped parsley, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. Melt 3 tablespoons of butter in a skillet over medium heat. Add the sliced onion, thyme, salt, and black pepper. Cook for 8–10 minutes, stirring occasionally, until the onions are soft and lightly caramelized.
  3. Keeping the rolls connected, slice the entire package of sweet rolls horizontally to create a top and bottom layer.
  4. Place the bottom half of the rolls in the prepared baking dish. Layer the roast beef evenly over the rolls, followed by the provolone cheese and caramelized onions.
  5. Place the top half of the rolls over the filling.
  6. In a small bowl, combine the melted butter with the dried onion soup mix. Brush the seasoned butter generously over the tops of the rolls.
  7. Cover the dish with foil and bake for 15 minutes.
  8. Remove the foil and bake for another 5–8 minutes, until the cheese is melted and the tops are golden.
  9. While the sliders bake, prepare the au jus. Combine the au jus gravy mix with 3 cups of water in a saucepan. Whisk well and bring to a simmer according to the gravy mix directions.
  10. Garnish the sliders with fresh chopped parsley. Separate the sliders and serve warm with hot au jus for dipping.

Notes

  • Keep the sweet rolls connected when slicing to make assembling the sliders easier.
  • Provolone gives these sliders a classic French dip flavor, but Swiss or mozzarella can also be used.
  • For deeper flavor, cook the onions slowly until golden and caramelized.
  • Covering the sliders during the first part of baking helps keep the rolls soft while the cheese melts.
  • Serve the au jus warm in small bowls for easy dipping.
  • These sliders are best served fresh while the cheese is hot and melted.
