Easy Chicken Street Tacos are packed with juicy, flavorful chicken thighs marinated with fresh lime juice, garlic, cumin, chili powder, and smoked paprika. Served in warm corn tortillas with fresh onion and cilantro, these Mexican-inspired tacos make a quick and satisfying weeknight meal.

Ingredients

For the Chicken Marinade

  • 1.5 lbs boneless, skinless chicken thighs
  • 3 tablespoons fresh lime juice, about 2 limes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For Serving

  • 8–12 small corn tortillas, street taco-style
  • 1/2 cup white onion, finely chopped
  • 1/2 cup fresh cilantro, chopped
  • Lime wedges, for serving

  • Cotija cheese
  • Avocado slices
  • Salsa verde
  • Pickled red onions

Instructions

  1. Place the chicken thighs in a large bowl or resealable bag. Add the lime juice, olive oil, minced garlic, cumin, chili powder, smoked paprika, oregano, salt, and black pepper.
  2. Toss the chicken thoroughly to coat it in the marinade. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  3. Heat a large skillet, grill pan, or outdoor grill over medium-high heat. Remove the chicken from the marinade and discard the excess marinade.
  4. Cook the chicken for about 5–7 minutes per side, depending on thickness, until browned and cooked through. The chicken should reach an internal temperature of 165°F (74°C).
  5. Transfer the chicken to a cutting board and let it rest for 5 minutes. Chop into small bite-sized pieces.
  6. Warm the corn tortillas in a dry skillet or directly on the grill for about 20–30 seconds per side until soft and pliable.
  7. Fill each tortilla with chopped chicken. Top with finely chopped white onion and fresh cilantro.
  8. Serve with lime wedges and your choice of cotija cheese, avocado, salsa verde, or pickled red onions.

Notes

  • For the juiciest tacos, use boneless skinless chicken thighs rather than chicken breast.
  • Marinate the chicken for at least 30 minutes, but avoid marinating longer than 4 hours because of the fresh lime juice.
  • Double up the corn tortillas if they are thin or tend to break.
  • Warm tortillas just before serving to make them soft and flexible.
  • Add sliced jalapeños or extra salsa verde if you prefer more heat.
  • Leftover cooked chicken can be refrigerated in an airtight container for up to 3 days.
