Deliciously Moist Chocolate Layer Cake

This Deliciously Moist Chocolate Layer Cake is rich, tender, and deeply chocolatey, with a soft crumb and creamy chocolate buttercream frosting. Hot coffee enhances the cocoa flavor while buttermilk keeps the cake wonderfully moist. It is a classic homemade chocolate cake that works beautifully for birthdays, celebrations, and everyday desserts.

Ingredients

Chocolate Cake

  • 1 and 3/4 cups (219g) all-purpose flour, spooned and leveled
  • 3/4 cup (64g) unsweetened natural cocoa powder
  • 1 and 3/4 cups (350g) granulated sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons espresso powder, optional
  • 1/2 cup (113g/120ml) vegetable oil, canola oil, or melted coconut oil
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 cup (240g/ml) buttermilk, at room temperature
  • 1 cup (240g/ml) freshly brewed strong hot coffee or hot water

Chocolate Buttercream

  • 1 and 1/4 cups (282g) unsalted butter, softened to room temperature
  • 3 and 1/2 cups (420g) confectioners’ sugar
  • 3/4 cup (64g) unsweetened cocoa powder, natural or Dutch-process
  • 3–5 tablespoons (45–75g/ml) heavy cream, half-and-half, or milk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • Semi-sweet chocolate chips, optional for decoration

Instructions

  1. Preheat the oven to 350°F (177°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper. Lightly grease the parchment.
  2. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, salt, and espresso powder if using.
  3. Add the vegetable oil, eggs, vanilla extract, and buttermilk. Whisk until the mixture is smooth and well combined.
  4. Slowly pour in the hot coffee or hot water while whisking continuously. The batter will be thin; this is normal and helps create a moist cake.
  5. Divide the batter evenly between the prepared cake pans.
  6. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  7. Allow the cakes to cool in the pans for about 10 minutes. Carefully remove them from the pans and transfer them to a wire rack to cool completely.
  8. To make the chocolate buttercream, beat the softened butter in a large bowl until smooth and creamy.
  9. Add the confectioners’ sugar and cocoa powder gradually, mixing on low speed until incorporated.
  10. Add the vanilla extract and salt. Beat while gradually adding 3 tablespoons of cream, half-and-half, or milk. Add more as needed until the frosting reaches a smooth, spreadable consistency.
  11. Place one cooled cake layer on a serving plate. Spread an even layer of chocolate buttercream over the top.
  12. Place the second cake layer on top and frost the top and sides of the cake with the remaining buttercream.
  13. Decorate with semi-sweet chocolate chips if desired. Slice and serve.

Notes

  • Use room-temperature eggs and buttermilk for a smoother, more evenly mixed batter.
  • Do not skip the hot coffee or hot water. It helps bloom the cocoa powder and creates a richer chocolate flavor.
  • The cake batter will be quite thin before baking. This is expected.
  • For the best texture, avoid overbaking. Remove the cakes when a toothpick comes out clean or with a few moist crumbs.
  • Make sure the cake layers are completely cool before frosting so the buttercream does not melt.
  • Espresso powder is optional, but it intensifies the chocolate flavor without making the cake taste strongly like coffee.
  • The finished cake can be covered and stored at room temperature for up to 2 days or refrigerated for longer storage.
  • For a stronger chocolate flavor, use Dutch-process cocoa powder in the buttercream.
