Creamy Crack Chicken Gnocchi Recipe

Creamy Crack Chicken Gnocchi is a comforting one-pan dinner made with tender chicken, pillowy gnocchi, creamy cheese, fresh spinach, and crispy beef bits. The rich and savory sauce comes together quickly for an easy, satisfying weeknight meal packed with flavor.

Ingredients

  • 3–4 boneless, skinless chicken breasts, about 1 lb
  • 16 oz fresh or frozen gnocchi
  • 8 oz cream cheese
  • 2 cups low-sodium chicken broth
  • 4 cups fresh spinach
  • 1 cup shredded cheddar cheese
  • 1/2 cup crispy beef bits
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with garlic powder, onion powder, salt, and pepper.
  2. Heat a large skillet over medium-high heat. Add the seasoned chicken and cook for 5–7 minutes, stirring occasionally, until browned and cooked through.
  3. Pour in the chicken broth and bring it to a gentle simmer.
  4. Add the gnocchi and cook according to the package directions, usually about 4–6 minutes for fresh gnocchi or slightly longer for frozen, stirring occasionally.
  5. Reduce the heat to medium-low and add the cream cheese. Stir until completely melted and incorporated into the broth.
  6. Add the fresh spinach and cook for 2–3 minutes, stirring until wilted.
  7. Stir in the shredded cheddar cheese until melted and the sauce is smooth and creamy.
  8. Fold in the crispy beef bits and cook for another 1–2 minutes.
  9. Taste and adjust the salt and pepper as needed. Serve hot.

Notes

  • Use crispy beef bits for a savory, smoky topping without pork.
  • Fresh or frozen gnocchi can be used; adjust the cooking time according to the package directions.
  • If the sauce becomes too thick, add a splash of chicken broth or milk.
  • For extra flavor, add crushed red pepper flakes, Parmesan cheese, or fresh parsley.
  • Chicken should reach an internal temperature of 165°F (74°C) before serving.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
