These Cottage Cheese and Veggie Stuffed Pita Pockets are a quick, fresh, and protein-rich meal made with creamy cottage cheese, juicy cherry tomatoes, crisp cucumber, and peppery arugula tucked inside a whole wheat pita. Ready in minutes, they make an easy breakfast, lunch, or light dinner.

Ingredients

  • 1 whole wheat pita pocket, halved
  • 3/4 cup low-fat cottage cheese
  • 1/4 cup chopped cherry tomatoes
  • 1/4 cucumber, diced
  • 1 handful arugula
  • Salt, to taste
  • Black pepper, to taste
  • Dried oregano, to taste

Instructions

  1. Cut the whole wheat pita in half and gently open each half to create two pockets.
  2. In a small bowl, combine the cottage cheese, chopped cherry tomatoes, and diced cucumber.
  3. Season the mixture with salt, black pepper, and dried oregano. Stir gently to combine.
  4. Divide the cottage cheese and vegetable mixture evenly between the two pita pockets.
  5. Add a handful of fresh arugula to each pita pocket.
  6. Serve immediately while the vegetables are crisp and fresh.

Notes

  • For extra flavor, add a squeeze of fresh lemon juice before filling the pita.
  • You can add chopped bell peppers, spinach, or fresh herbs for more vegetables.
  • For meal prep, keep the filling refrigerated and stuff the pita just before serving.
  • Use a high-protein whole wheat pita if you want to increase the protein content.
