Coffee Cake Recipe

This easy Coffee Cake is a soft, tender cake topped with a buttery cinnamon brown sugar streusel and optional chopped walnuts. A simple powdered sugar drizzle adds a sweet finishing touch, making it a cozy choice for breakfast, brunch, or an afternoon treat.

Ingredients

  • For the cake:
  • 1 large egg
  • 1/4 cup vegetable or canola oil
  • 1 teaspoon vanilla extract
  • 3/4 cup granulated sugar
  • 1/2 cup milk
  • 1/4 teaspoon salt
  • 2 teaspoons baking powder
  • 1 1/2 cups all-purpose flour
  • For the streusel:
  • 2 tablespoons butter, melted
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 2 tablespoons all-purpose flour
  • 1/2 cup chopped walnuts, optional
  • For the icing drizzle:
  • 1 tablespoon butter, room temperature
  • 3/4 cup powdered sugar
  • 1 tablespoon milk, plus extra if needed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, whisk together the egg, vegetable or canola oil, vanilla extract, sugar, and milk until smooth.
  3. Add the salt, baking powder, and flour. Stir gently until just combined. Do not overmix.
  4. Pour the cake batter into the prepared baking pan and spread it evenly.
  5. To make the streusel, combine the melted butter, brown sugar, cinnamon, flour, and chopped walnuts if using. Mix until crumbly.
  6. Sprinkle the streusel evenly over the cake batter.
  7. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let the cake cool in the pan for about 10–15 minutes.
  9. For the icing drizzle, mix the room-temperature butter, powdered sugar, and 1 tablespoon of milk until smooth. Add a little more milk if needed to reach a drizzling consistency.
  10. Drizzle the icing over the warm or cooled coffee cake.
  11. Slice and serve.

Notes

  • Do not overmix the cake batter to keep the coffee cake soft and tender.
  • Walnuts are optional and can be omitted for a nut-free version.
  • For a stronger cinnamon flavor, add a small pinch of cinnamon to the cake batter.
  • Add the milk to the icing gradually so it does not become too thin.
  • The cake can be served slightly warm or at room temperature.
  • Store covered at room temperature for up to 2 days.
