Chicken Fried Rice

This easy Chicken Fried Rice is a quick and satisfying meal made with cooked rice, tender chicken, mixed vegetables, scrambled eggs, and savory soy sauce. Ready in just minutes, it’s perfect for a simple weeknight dinner, quick lunch, or easy meal prep.

Ingredients

  • 2 cups cooked rice
  • 2 cooked chicken breasts, diced
  • 1 cup frozen mixed vegetables
  • 2 eggs, scrambled
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder

Instructions

  1. Heat the sesame oil in a large skillet or wok over medium-high heat.
  2. Add the frozen mixed vegetables and cook for 2–3 minutes until heated through.
  3. Add the diced cooked chicken and garlic powder. Stir-fry for 2–3 minutes until the chicken is hot.
  4. Add the cooked rice and stir well to combine with the chicken and vegetables.
  5. Pour in the soy sauce and toss everything together. Cook for 3–4 minutes, stirring occasionally, until the rice is hot and lightly toasted.
  6. Add the scrambled eggs and gently break them into smaller pieces while mixing them through the rice.
  7. Cook for another 1–2 minutes, then taste and add more soy sauce if desired.
  8. Serve hot and enjoy immediately.

Notes

  • Cold, day-old cooked rice works best because it stays separate and creates better fried rice.
  • Use low-sodium soy sauce if you prefer a less salty dish.
  • You can add green onions, peas, carrots, or other vegetables for extra flavor and color.
  • For the best texture, avoid overcrowding the skillet and cook over medium-high to high heat.
