Cheesy Ranch Chicken Taquitos

These Cheesy Ranch Chicken Taquitos are an easy, creamy, and cheesy appetizer or dinner made with shredded cooked chicken, cream cheese, cheddar, and ranch seasoning wrapped in flaky crescent roll dough. They’re simple to prepare and especially convenient when using leftover or rotisserie chicken.

Ingredients

  • 2 cups cooked shredded chicken, rotisserie chicken works well
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1 packet (1 oz) ranch seasoning
  • 1 can (8 oz) refrigerated crescent roll dough, about 8 triangles
  • 1/4 cup chopped green onions, optional
  • Cooking spray or a little oil, for the slow cooker

Instructions

  1. In a medium bowl, combine the shredded chicken, softened cream cheese, cheddar cheese, and ranch seasoning. Stir until the mixture is evenly combined.
  2. Fold in the chopped green onions if using.
  3. Separate the crescent roll dough into 8 triangles. If desired, gently press the seams together to create slightly larger pieces of dough.
  4. Place a portion of the chicken mixture along the wide end of each crescent triangle.
  5. Roll each piece of dough tightly from the wide end toward the tip, enclosing the filling.
  6. Lightly coat the slow cooker with cooking spray or a small amount of oil. Arrange the filled crescent rolls in the slow cooker in a single layer as much as possible.
  7. Cover and cook on HIGH for about 2–3 hours, or until the crescent dough is cooked through and the filling is hot.
  8. Carefully remove the taquitos from the slow cooker and let them cool for a few minutes.
  9. Serve warm with ranch dressing, salsa, or your favorite dipping sauce.

Notes

  • Rotisserie chicken is a convenient option and adds plenty of flavor.
  • Make sure the cream cheese is softened so the filling mixes smoothly.
  • Do not overfill the crescent dough, or the filling may leak out during cooking.
  • For extra flavor, add chopped jalapeños, green chiles, or a pinch of garlic powder.
  • Cheddar can be replaced with Monterey Jack or a Mexican cheese blend.
  • Cooking times can vary between slow cookers, so check that the crescent dough is fully cooked before serving.
