Cheesy Hamburger Potato Casserole

This Cheesy Hamburger Potato Casserole is a cozy, filling dinner made with seasoned ground beef or turkey, thinly sliced potatoes, creamy mushroom soup, milk, and plenty of melted cheese. Everything bakes together until the potatoes are tender and the top is golden and bubbly. It is an easy family-friendly casserole for a comforting weeknight meal.

Ingredients

  • 1½ lbs ground beef or ground turkey
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 5–6 medium russet potatoes, thinly sliced about ⅛ inch thick
  • 2 cups shredded cheddar cheese, divided
  • 1 cup shredded mozzarella cheese, optional
  • 1 (10.5 oz) can cream of mushroom soup or cream of chicken soup
  • 1 cup milk
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika, optional
  • 1 tablespoon olive oil or butter, for greasing the dish

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or butter.
  2. Heat a large skillet over medium-high heat. Add the ground beef or turkey and chopped onion. Cook for 6–8 minutes, breaking the meat apart, until browned and the onion is softened.
  3. Add the minced garlic, salt, black pepper, and paprika if using. Cook for another 30–60 seconds, then remove from the heat. Drain excess grease if using ground beef.
  4. In a medium bowl, whisk together the cream of mushroom or cream of chicken soup and milk until smooth.
  5. Arrange a layer of sliced potatoes in the bottom of the prepared baking dish. Spoon some of the meat mixture over the potatoes, followed by some of the soup mixture and a layer of cheddar cheese.
  6. Repeat the layers with the remaining potatoes, meat, soup mixture, and cheddar cheese, finishing with cheese on top. Sprinkle the mozzarella over the top if using.
  7. Cover the baking dish tightly with aluminum foil and bake for 50–60 minutes, or until the potatoes are nearly tender.
  8. Remove the foil and continue baking for 15–20 minutes, until the potatoes are fully tender and the cheese is melted, golden, and bubbly.
  9. Let the casserole rest for 10 minutes before serving. This helps the creamy layers set slightly and makes it easier to serve.

Notes

  • Slice the potatoes evenly and thinly so they cook at the same rate.
  • For a lighter version, use lean ground turkey and reduced-fat cheese.
  • If using ground beef, drain excess grease after browning for a less oily casserole.
  • For extra flavor, add sliced mushrooms, bell peppers, or a pinch of onion powder.
  • Sharp cheddar adds more flavor, while mozzarella gives the casserole a softer, stretchier cheese layer.
  • If the potatoes are not tender after the covered baking time, cover again and bake for another 10–15 minutes before uncovering.
  • Store leftovers in the refrigerator for up to 3 days and reheat individual portions in the microwave or oven.
