Buffalo Chicken Wraps with Blue Cheese and Celery

These Buffalo Chicken Wraps with Blue Cheese and Celery are an easy, flavorful meal made with tender rotisserie chicken, spicy buffalo sauce, melty mozzarella, crisp celery, and creamy blue cheese dressing. They come together quickly and make a satisfying lunch or dinner.

Ingredients

  • 1 rotisserie chicken, skin removed and meat diced
  • ½ cup buffalo sauce
  • 4 tablespoons unsalted butter, melted
  • 4 large flour tortillas
  • 2 cups shredded mozzarella cheese
  • 4 celery stalks, cut into batons
  • 1 cup celery leaves or fresh parsley
  • ½ cup blue cheese dressing

Instructions

  1. In a large bowl, combine the diced rotisserie chicken, buffalo sauce, and melted butter. Toss until the chicken is evenly coated.
  2. Warm a large skillet over medium heat. Add the buffalo chicken mixture and cook for 3–5 minutes, stirring occasionally, until heated through.
  3. Place one flour tortilla on a clean work surface. Sprinkle about ½ cup of shredded mozzarella over the center.
  4. Spoon one-quarter of the buffalo chicken mixture over the cheese. Add celery batons and a handful of celery leaves or parsley.
  5. Drizzle with blue cheese dressing.
  6. Fold the sides of the tortilla inward, then roll it tightly from the bottom to form a wrap. Repeat with the remaining tortillas and filling.
  7. For a lightly crisped wrap, place each wrap seam-side down in a dry skillet over medium heat and cook for 1–2 minutes per side.
  8. Slice in half and serve warm with extra buffalo sauce or blue cheese dressing, if desired.

Notes

  • Rotisserie chicken can be replaced with cooked shredded chicken breast or thighs.
  • Adjust the amount of buffalo sauce to control the heat level.
  • For a milder wrap, use a mild buffalo sauce or mix the sauce with a little extra melted butter.
  • Blue cheese dressing can be served on the side instead of inside the wrap.
  • For the best texture, serve the wraps immediately while the cheese is warm and melted.
