Buffalo Chicken Summer Rolls

Buffalo Chicken Summer Rolls are a fresh, light twist on classic buffalo chicken. Tender shredded chicken is mixed with creamy Greek yogurt and spicy hot sauce, then wrapped in soft rice paper with crunchy carrots and tangy blue cheese. Serve them with ranch or blue cheese dressing for an easy lunch, appetizer, or party snack.

Ingredients

  • ½ cup plain Greek yogurt
  • 3 tablespoons hot sauce
  • 2 cups cooked and cooled chicken, shredded and/or chopped
  • Salt and black pepper, to taste
  • 8 rice paper wrappers
  • ½ cup matchstick or shredded carrots
  • ½ cup crumbled blue cheese
  • Greek Yogurt Ranch Dip, Greek Yogurt Blue Cheese Dip, or your favorite ranch or blue cheese dressing, for serving

Instructions

  1. Make the buffalo chicken filling: In a medium bowl, whisk together the Greek yogurt and hot sauce until smooth. Add the cooked chicken and toss until evenly coated. Season with salt and black pepper to taste.
  2. Prepare the rice paper: Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 5–10 seconds, just until it becomes flexible. Place it flat on a clean work surface.
  3. Fill the wrapper: Place a small portion of buffalo chicken slightly below the center of the wrapper. Add some shredded carrots and crumbled blue cheese.
  4. Roll the summer roll: Fold the bottom edge over the filling, fold in both sides, and roll tightly upward like a burrito. Repeat with the remaining wrappers and filling.
  5. Serve: Arrange the summer rolls on a serving plate and serve immediately with Greek yogurt ranch, blue cheese dip, ranch dressing, or your favorite dipping sauce.

Notes

  • Do not soak the rice paper wrappers for too long or they can become difficult to handle and tear easily.
  • Use fully cooked and cooled chicken for the easiest assembly.
  • Rotisserie chicken or leftover grilled chicken works well in this recipe.
  • Adjust the amount of hot sauce to make the buffalo filling milder or spicier.
  • For extra crunch, add thinly sliced celery, cucumber, or bell pepper.
  • If you prefer a milder flavor, use a combination of hot sauce and Greek yogurt with less hot sauce.
  • For the best texture, serve the summer rolls shortly after assembling them.
  • If preparing ahead, keep the rolls covered with a slightly damp clean towel and refrigerate for a short period to help prevent the rice paper from drying out.
