Buffalo Chicken Grilled Cheese Recipe

This Buffalo Chicken Grilled Cheese is a crispy, cheesy, and flavorful sandwich packed with tender chicken, spicy Buffalo sauce, creamy ranch dressing, cream cheese, Muenster cheese, and tangy blue cheese. It’s an easy comfort-food lunch or dinner that’s perfect for using leftover or rotisserie chicken.

Ingredients

  • 8 slices sandwich bread
  • 2 cups cooked chicken breasts, shredded or chopped
  • 2 teaspoons minced garlic
  • ¼ teaspoon cayenne pepper, optional
  • 1 teaspoon ground black pepper
  • ½ teaspoon paprika
  • ½ cup Frank’s Hot Sauce
  • ½ cup homemade ranch dressing or your favorite store-bought ranch
  • 4 ounces cream cheese
  • 4 tablespoons butter, softened
  • 4–8 slices Muenster cheese
  • 4 tablespoons crumbled blue cheese

Instructions

  1. In a large bowl, combine the cooked chicken, minced garlic, cayenne pepper, black pepper, paprika, and Frank’s Hot Sauce. Mix until the chicken is evenly coated.
  2. Add the ranch dressing and cream cheese to the chicken mixture. Stir until creamy and well combined.
  3. Spread the softened butter evenly over one side of each slice of sandwich bread.
  4. Place four slices of bread butter-side down. Add Muenster cheese, followed by a generous portion of the Buffalo chicken mixture.
  5. Sprinkle each sandwich with crumbled blue cheese and top with another slice of Muenster cheese if desired.
  6. Top with the remaining slices of bread, keeping the buttered sides facing outward.
  7. Heat a large skillet or griddle over medium-low heat. Place the sandwiches in the skillet and cook for about 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and crisp and the cheese is melted.
  8. Reduce the heat if the bread is browning too quickly before the cheese melts.
  9. Remove the sandwiches from the skillet and let them rest for 1–2 minutes before slicing.
  10. Serve hot with extra ranch dressing or Buffalo sauce for dipping, if desired.
