Breakfast Quesadilla Recipe

This Breakfast Quesadilla is a quick, cheesy, and satisfying way to start the day. Fluffy eggs, crispy bacon or beef bits, and melted cheddar cheese are tucked inside warm flour tortillas and cooked until golden and crisp. It’s an easy breakfast that’s perfect for busy mornings.

Ingredients

  • 4 large eggs
  • 4 small flour tortillas (6-inch)
  • 4 slices bacon, cooked and crumbled, or 4 tbsp beef bits, divided
  • 1 cup cheddar cheese, grated
  • 8 tbsp canola oil, divided

Instructions

  1. Cook the bacon in a skillet until crisp, then crumble it and set aside. If using beef bits, prepare them according to the package directions.
  2. In a bowl, whisk the eggs until well combined.
  3. Heat a nonstick skillet over medium heat and add a small amount of the canola oil. Pour in the eggs and gently scramble until just cooked. Remove from the heat.
  4. Place one tortilla on a clean work surface. Add a portion of the scrambled eggs, bacon or beef bits, and shredded cheddar cheese over one half of the tortilla.
  5. Fold the tortilla in half to cover the filling. Repeat with the remaining tortillas and filling.
  6. Heat a skillet over medium heat and add enough canola oil to lightly coat the surface.
  7. Cook each quesadilla for 2–3 minutes per side, adding more oil as needed, until golden brown and crisp and the cheese is melted.
  8. Transfer to a plate and let cool for 1 minute before slicing into wedges.
  9. Serve warm with salsa, hot sauce, or your favorite breakfast toppings.

Notes

  • Use beef bits instead of bacon for a beef-based breakfast quesadilla.
  • Do not overcook the eggs; they will continue cooking slightly inside the hot quesadilla.
  • Cheddar can be replaced with Monterey Jack, Colby Jack, or a Mexican cheese blend.
  • For a lighter quesadilla, use less cooking oil and cook in a nonstick skillet.
  • Add diced bell peppers, onions, tomatoes, or green onions for extra flavor and texture.
  • Serve immediately for the best combination of crispy tortillas and melted cheese.
