Ingredients

  • 1 lb beef flank steak (or skirt steak)
  • ½ teaspoon baking soda
  • 1 tablespoon light soy sauce (or soy sauce)
  • 1 teaspoon peanut oil
  • 2 teaspoons cornstarch
  • For the Sauce:
  • ½ cup chicken broth
  • 2 tablespoons oyster sauce
  • 1 tablespoon light soy sauce (or soy sauce)
  • 1 teaspoon dark soy sauce (or soy sauce)
  • 2 teaspoons sugar
  • 2 teaspoons cornstarch

Instructions

  1. Thinly slice the flank steak or skirt steak against the grain into bite-sized strips.
  2. Place the sliced beef in a bowl and add the baking soda, light soy sauce, peanut oil, and cornstarch. Mix well until the beef is evenly coated. Let it marinate for about 15 minutes.
  3. In a separate bowl, combine the chicken broth, oyster sauce, light soy sauce, dark soy sauce, sugar, and cornstarch. Stir until the cornstarch is fully dissolved.
  4. Heat a large skillet or wok over medium-high heat. Add a small amount of oil if needed.
  5. Add the marinated beef in a single layer and stir-fry for 2–3 minutes, until browned and nearly cooked through.
  6. Pour the prepared oyster sauce mixture into the skillet or wok.
  7. Stir everything together and cook for 2–3 minutes, until the sauce comes to a gentle simmer and thickens.
  8. Continue cooking until the beef is fully coated in the glossy sauce and cooked to your desired doneness.
  9. Remove from the heat and serve immediately with steamed rice or noodles.

  • Slice the beef thinly against the grain for the most tender texture.
  • Do not overcrowd the skillet or wok; cook the beef in batches if necessary.
