Beef and Cheese Chimichangas

These Beef and Cheese Chimichangas are crispy, cheesy, and packed with seasoned ground beef, refried beans, salsa, and melted cheese. The flour tortillas are filled, rolled, and cooked until golden for an easy Mexican-inspired dinner the whole family will enjoy.

Ingredients

  • 1 lb ground beef
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet (1 oz) taco seasoning, or homemade
  • 1/2 cup salsa
  • 1 cup refried beans
  • 1 1/2 cups shredded cheddar cheese or Mexican blend
  • 6 large flour tortillas, burrito-size
  • 2 tablespoons vegetable oil, for brushing or frying

Instructions

  1. Preheat the oven to 425°F (220°C) if baking the chimichangas.
  2. Heat a large skillet over medium heat. Add the ground beef and diced onion. Cook for 5–7 minutes, breaking up the beef, until browned and cooked through.
  3. Add the minced garlic and taco seasoning. Stir and cook for about 1 minute until fragrant.
  4. Stir in the salsa and cook for another 2 minutes. Remove from the heat.
  5. Warm the flour tortillas briefly so they are easier to roll.
  6. Spread about 2–3 tablespoons of refried beans down the center of each tortilla. Add the seasoned beef mixture and sprinkle generously with shredded cheese.
  7. Fold the sides of each tortilla inward, then roll tightly from the bottom to form a sealed burrito.
  8. Brush the chimichangas lightly with vegetable oil and place them seam-side down on a baking sheet.
  9. Bake for 15–20 minutes, turning once halfway through, until golden and crisp.
  10. Alternatively, heat vegetable oil in a skillet and fry the chimichangas until golden brown and crispy on all sides. Drain briefly on paper towels.
  11. Let them cool for a few minutes before serving. Serve with extra salsa, sour cream, guacamole, or your favorite toppings.

Notes

  • Warm the tortillas before filling to prevent them from cracking while rolling.
  • Do not overfill the tortillas, as this can make them difficult to seal.
  • For extra crispy baked chimichangas, brush all sides lightly with oil before baking.
  • A Mexican cheese blend can be used instead of cheddar for a more flavorful filling.
  • Serve with sour cream, guacamole, salsa, shredded lettuce, or chopped tomatoes.
  • For meal prep, assemble the chimichangas ahead of time and refrigerate until ready to cook.
