Beef and Broccoli Recipe

This Beef and Broccoli Recipe is a quick and flavorful stir-fry made with tender thinly sliced sirloin steak, crisp broccoli, garlic, and a savory soy-based sauce. Ready in about 30 minutes, it’s an easy homemade dinner that’s perfect served over steamed rice.

Ingredients

  • 1 pound sirloin steak, thinly sliced
  • 4 tablespoons cornstarch, divided
  • 2/3 cup soy sauce, divided
  • 2 tablespoons butter or oil
  • 1 tablespoon rice vinegar
  • 3 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 cup beef stock
  • 4 cups fresh broccoli florets
  • 1/4 cup water

Instructions

  1. Thinly slice the sirloin steak against the grain. For easier slicing, place the steak in the freezer for about 15–20 minutes first.
  2. Place the sliced beef in a bowl and toss with 2 tablespoons of cornstarch and 1/3 cup of soy sauce. Let it marinate for 10–15 minutes.
  3. In a small bowl, whisk together the remaining soy sauce, beef stock, rice vinegar, brown sugar, garlic, and the remaining 2 tablespoons of cornstarch until smooth.
  4. Heat the butter or oil in a large skillet or wok over medium-high heat.
  5. Add the marinated beef in a single layer, working in batches if necessary. Cook for 2–3 minutes per side until browned and just cooked through. Transfer the beef to a plate.
  6. Add the broccoli and 1/4 cup water to the same skillet. Cover and steam for 2–3 minutes, until the broccoli is bright green and slightly tender.
  7. Return the cooked beef to the skillet and pour in the prepared sauce.
  8. Cook for 2–3 minutes, stirring frequently, until the sauce thickens and coats the beef and broccoli.
  9. Remove from the heat and serve immediately over steamed white or brown rice.

Notes

  • Slice the steak thinly against the grain for the most tender texture.
  • Partially freezing the steak makes it much easier to cut into thin, even slices.
  • Do not overcrowd the skillet when browning the beef. Cook in batches if needed.
  • Use low-sodium soy sauce if you prefer a less salty dish.
  • For extra flavor, add a pinch of red pepper flakes or a small amount of fresh grated ginger to the sauce.
  • Broccoli should remain slightly crisp rather than becoming overly soft.
  • Serve over steamed rice, noodles, or cauliflower rice.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
