Barbecue Chicken Quesadilla

Barbecue Chicken Quesadillas are an easy weeknight meal made with shredded chicken, smoky barbecue sauce, salsa, green chiles, and sharp cheddar cheese tucked inside crisp, golden flour tortillas. Serve them with sour cream and extra salsa for a quick and satisfying dinner.

Ingredients

  • 3 cups shredded cooked chicken
  • 1 can (4 ounces) chopped green chiles
  • 1/2 cup salsa
  • 1/3 cup barbecue sauce
  • 1/4 cup taco sauce
  • 8 flour tortillas (8 inches)
  • 3/4 cup shredded sharp cheddar cheese
  • Optional: Sour cream and additional salsa, for serving

Instructions

  1. In a medium bowl, combine the shredded chicken, green chiles, salsa, barbecue sauce, and taco sauce. Stir until the chicken is evenly coated.
  2. Heat a large nonstick skillet or griddle over medium heat.
  3. Place one tortilla in the skillet. Sprinkle about 3 tablespoons of shredded cheddar cheese over half of the tortilla, then spread about 3/4 cup of the chicken mixture over the cheese. Sprinkle with a little more cheese and fold the tortilla in half.
  4. Cook for 2 to 3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and crisp and the cheese has melted.
  5. Repeat with the remaining tortillas, chicken mixture, and cheese.
  6. Cut the quesadillas into wedges and serve warm with sour cream and additional salsa, if desired.

Notes

  • Rotisserie chicken is a convenient option for the shredded cooked chicken.
  • Use your favorite barbecue sauce to adjust the sweetness and smoky flavor.
  • For extra heat, add sliced jalapeƱos or a few dashes of hot sauce to the chicken mixture.
  • Cook the quesadillas over medium heat so the tortillas become crisp without browning too quickly.
  • Leftover quesadillas can be refrigerated for up to 3 days and reheated in a skillet or air fryer.
