Ingredients

Pretzel Chicken Fingers

  • 1/4 cup Dijon mustard
  • 1/4 cup plain yogurt, sour cream, or olive oil mayonnaise
  • 2 tablespoons honey
  • 2 pounds boneless chicken tenders
  • 2 cups finely crushed salted pretzel twists
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • Extra virgin olive oil, for brushing
  • Ranch dressing, for serving (optional)

Spicy Honey Sauce

  • 1/4 cup honey
  • 3 tablespoons salted butter
  • 1 teaspoon cayenne pepper, more or less to taste
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Kosher salt, to taste

Instructions

  1. Preheat the oven: Heat the oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it. For extra crispiness, place a wire rack over the baking sheet and lightly brush the rack with oil.
  2. Prepare the coating: In a shallow bowl, whisk together the Dijon mustard, yogurt, sour cream, or mayonnaise, and honey until smooth.
  3. Prepare the pretzel mixture: In a second shallow bowl, combine the finely crushed pretzels, garlic powder, onion powder, smoked paprika, and black pepper.
  4. Coat the chicken: Pat the chicken tenders dry. Dip each tender into the honey mustard mixture, turning to coat well, then press it into the crushed pretzel mixture until completely covered. Place the coated chicken pieces on the prepared baking sheet or wire rack.
  5. Add olive oil: Lightly brush or spray the coated chicken fingers with extra virgin olive oil. This helps the pretzel coating brown and crisp in the oven.
  6. Bake: Bake for 18-22 minutes, turning the chicken halfway through, until the coating is crisp and the chicken reaches an internal temperature of 165°F (74°C). Cooking time may vary depending on the thickness of the tenders.
  7. Make the spicy honey sauce: While the chicken bakes, melt the salted butter in a small saucepan over low heat. Stir in the honey, cayenne pepper, chili powder, and smoked paprika. Season lightly with kosher salt and warm for 1-2 minutes, stirring until smooth.
  8. Finish and serve: Remove the chicken fingers from the oven and let them rest for a few minutes. Drizzle with the spicy honey sauce or serve it on the side. Add ranch dressing for dipping if desired.

Notes

  • For extra crunch: Crush the pretzels finely but leave a few small pieces for added texture.
  • Adjust the heat: Start with less cayenne for a milder sauce and add more to taste.
  • Chicken temperature: Always cook the chicken to an internal temperature of 165°F (74°C).
  • Keep them crispy: A wire rack allows hot air to circulate around the chicken and helps prevent the bottom from becoming soggy.
  • Dipping options: Serve with ranch, honey mustard, extra spicy honey, or your favorite dipping sauce.
  • Make ahead: The pretzel coating can be prepared in advance, and the chicken can be coated shortly before baking.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat in a 400°F oven or air fryer to help restore the crisp coating.
