This Autumn Chicken Dinner with Roasted Vegetables is a cozy one-pan meal packed with tender chicken thighs, roasted butternut squash, Brussels sprouts, and cheesy tortellini. Garlic, butter, smoked paprika, and fresh thyme bring all the comforting flavors of fall together in one satisfying dinner.

Ingredients

  • 3 cups butternut squash, peeled and cubed
  • 12 ounces Brussels sprouts, halved
  • 3 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon smoked paprika
  • 9 ounces cheese tortellini
  • 3 tablespoons butter
  • 5 cloves garlic, minced
  • 1 tablespoon fresh thyme
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet or roasting pan with parchment paper.
  2. Place the cubed butternut squash and halved Brussels sprouts on the baking sheet. Drizzle with olive oil and season with salt and black pepper. Toss to coat evenly.
  3. Pat the chicken thighs dry and season both sides with smoked paprika, salt, and black pepper.
  4. Arrange the chicken thighs among the vegetables. Roast for about 20 minutes.
  5. Meanwhile, cook the cheese tortellini according to the package directions until just tender. Drain well.
  6. Remove the baking sheet from the oven. Add the cooked tortellini, butter, minced garlic, and fresh thyme to the vegetables. Toss gently to coat everything with the melted butter and garlic.
  7. Return the pan to the oven and roast for another 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), the vegetables are tender, and the tortellini is lightly golden.
  8. Serve warm, spooning the roasted vegetables, tortellini, and chicken onto plates. Finish with additional fresh thyme and black pepper if desired.

  • Cut the butternut squash into evenly sized cubes so it roasts at the same rate as the Brussels sprouts.
  • Chicken thighs can be replaced with boneless, skinless chicken breasts, but cooking time may vary.
